The owner of the restaurant is Ms. Phan Thi Kim Linh, 37 years old, from Da Lat coming to Saigon to establish a business and open a crab noodle shop for 7 years. It’s called crab vermicelli because it contains crab meat, which is different from the way crabs are usually found in a bowl of vermicelli noodles.

She said that when she was a child in her hometown of Da Lat, vermicelli is a dish associated with childhood. Every weekend, her mother cooks vermicelli for the whole family to eat. When she came to Saigon to live, she couldn’t find the flavor of vermicelli noodles cooked by her mother and like her hometown, buying vermicelli from a restaurant was not familiar with the taste. Since then, she opened a small noodle shop on Dang Dung Street, selling all kinds of dishes such as Quang noodles, beef vermicelli, shumai bread, cheese yogurt in Da Lat style, she called this a small corner of Da Lat in the middle of Saigon.

The bowl of vermicelli noodles is easy to identify with a plate of fresh chopped green vegetables with carol lettuce, bananas, fresh bean sprouts, and extra marjoram, all of which look eye-catching. As for the vermicelli, Da Lat people often cook with dried shrimp with meat and eggs, while Linh’s shop has a slight change, the curry made from crabs has a fatty taste, combined with dried meat and shrimp, and the fresh shrimp smells good. In addition, the bowl of vermicelli has tomatoes, soft blood, fried tofu. Guests can choose to eat ribs or pork rolls. The broth is full of flavor and filled with chopped green onions sprinkled on top.

“The weather in Da Lat is cool all year round, the greens are very fresh, all the goods are freshly picked and used immediately, so they are very crispy and sweet. I have a term to move green vegetables from Da Lat to Saigon every day, after that, the vegetables are stored in the refrigerator. , only customers call to bring it out to keep the freshness,” added Linh.

Ms. Van Khanh, a regular customer at the restaurant who comes here every day to eat vermicelli noodles, commented: “The owner makes a clean and delicious dish for me, the vermicelli with green vegetables is delicious and crispy. I also recommend more. Let family members come to the restaurant to enjoy and they say they will come back again.”

As for Ms. Ha An, the first time I visited the shop, I saw that the place was not too large but bright, arrived at an empty hour, so the tables and chairs were comfortable. “The broth has a light taste, not too rich and sweet like the ones I like to eat, the topping is quite full, the green vegetables are delicious and similar to Da Lat”, she shared, having the opportunity to visit the shop to try it. The price of a bowl of vermicelli is 50,000 VND, 65,000 VND for beef noodle soup, higher than before the epidemic due to the price increase of raw materials. “Before the epidemic, I sold from the morning to 8 pm, but now it only sells until 2 pm, if anyone wants to eat after that time, I will deliver to take away. After the service, the number of customers coming to the shop decreased a lot, many people limited eating outside, my shop also It’s more empty and sad.
