How to cook flavorful Quang chicken noodles at home

This is a typical culinary dish of the people of Quang Nam – Da Nang.

  • 1 chicken (about 1.3 kg)
  • 200 gr pork belly (pork belly)
  • 20 quail eggs
  • 1 fresh turmeric root
  • 1 handful of shallots (if not available, replace with purple onions)
  • 4 cloves of garlic
  • 2 lemongrass branches
  • Spices: Fish sauce, salt, sugar, seasoning powder
  • Peanut oil, cashew oil
  • Quang noodles, rice paper
  • Herbs, side dishes: Banana ears, bean sprouts, basil, green onions…
  • Roasted peanut


1. Preliminary processing

  • Crush turmeric. Chopped onion and garlic. Peel and slice chili. Wash green onions, slice into pieces.  
  • Clean the chicken, rub it with lemon and salt, wash it and cut it into bite-sized pieces.
  • Wash the pork belly and cut it into bite-sized pieces.
  • Boil quail eggs, soak in cold water, peel off the shell.

2. Marinate

  • Marinate the chicken with 2/3 of the amount of crushed turmeric, 1/2 of the amount of shallot, minced garlic along with 2 tablespoons of fish sauce, 1 teaspoon of salt, 1 teaspoon of seasoning powder and stir well to absorb the flavor.
  • Marinate the pork belly with 1/3 of the remaining turmeric along with 1/2 tablespoon of fish sauce, 1/2 teaspoon of salt, and 1/2 teaspoon of seasoning powder.

3. Processing

  • Heat peanut oil, add shallots and remaining garlic and saute until fragrant. Stir-fry the marinated chicken until firm, then braise over medium heat. Pour into pot, pour in a little water.
  • Continue stir-frying the marinated pork belly, add quail eggs and stir-fry until they have a beautiful color. Pour this into the pot.  
  • Add crushed lemongrass to enhance the aroma. Occasionally skim off foam if there is any. When the meat and eggs are soft enough to your liking and absorb the flavor, add a little cashew oil to give it a beautiful color. Adjust seasoning to taste. Quang noodle broth is very important, converging color and flavor .  
  • Boil Quang noodles in water, then arrange them in a bowl, put chicken, pork, quail eggs on top and pour in hot broth. Sprinkle with green onions and roasted peanuts. Served with raw vegetables and rice paper, it is very delicious. 

4. Finished product requirements

  • The chicken is moderately tender, the pork is fatty, the quail eggs are rich in flavor mixed with crunchy peanuts, fresh herbs, and the broth is rich in golden flavor. Break a little rice paper, squeeze a little lemon juice, stir gently and enjoy, so many flavors of heaven and earth blend together on the tip of the tongue, awakening all senses.


  • You shouldn’t add too much water to Quang chicken noodles because it’s a bit dry, which is the style here.
  • Eating rice paper with rice paper originates from the custom of celebrating death anniversary of Quang people. If it is missing, then the view is not complete or complete.
