Hue non-beef noodle shop sells 1,000 bowls per day

Referring to Hue cuisine, people often think of the famous beef noodle dish, but few know that the ancient capital also has a specialty of pork and crab vermicelli. Mrs. Vo Thi Suong’s pork spring rolls dish is the breakfast and lunch of many people living near No. 5 Street, Ta Quang Buu, District 8, Ho Chi Minh City for many years.

Ms. Suong said that there are very few people who sell crab vermicelli, because in addition to the pork roll, Hue people also add rare beef or beef tendon. “Because my family can’t eat beef and beef-flavored dishes, I replace it with pork rolls. It’s happy that the diners feel satisfied and supportive,” she said.

Pork spring roll noodle soup has a bar broth, mild lemongrass aroma because it is cooked from rock sugar, pork bones are stewed for many hours with charcoal, so it smells of smoke. “I use more than 200 kg of pork bones of all kinds such as spine, ribs, thighbone to cook 5 pots of nearly 800 liters of broth”, Ms. Suong said.

“When I first entered Ho Chi Minh City, my family worked as a cake to make a living, but at that time the economy was still difficult, I could not afford to support 3 children, so I found sidewalks to sell vermicelli to earn more. Thanks to heaven, customers eat. Then support and help that I have only sold until now.16 years from a sidewalk shop to the time of opening a shop with proper premises are also very difficult “, Ms. Suong said.

A mixed bowl of vermicelli includes crab rolls, silk rolls, pork rolls and blood. Served with a plate of raw vegetables including bean sprouts, banana shavings, lettuce, cilantro, basil. Crab pies are the highlight of this bowl of vermicelli with a smooth, creamy sea crab meat mixed with lean pork that is tough and just eaten.

The restaurant uses microfiber vermicelli – a minus point for some diners who are accustomed to eating big noodle with regular Hue restaurants. However, the broth is appreciated because it does not use beef bones, so the taste is more delicate.

The shop sells from 6:30 to 13:00 per day, with visitors coming to the shop the busiest from 7am to 8:30. On weekends, the shop can sell up to 1,300 bowls of noodles. Each bowl of vermicelli costs 50,000 VND.
