Soc Trang is one of the Western provinces with a famous noodle soup dish. This is a traditional dish of the Khmer people, called “num-chooc”, while the Kinh people call it noodle soup. This dish has a delicious flavor because of the combination of culinary culture of the three ethnic groups Kinh – Khmer – Chinese.

Ms. La Thi My Phuong – a famous noodle soup restaurant owner in Soc Trang, said: “The essence of this dish is the broth – a soup made from fish sauce, lemongrass stalks and vermicelli wormwood (a type of tuber). turmeric, but smaller and darker yellow used to eliminate fishy smell). The fish sauce is processed separately, cooked and only filtered to get the clear water. Then, this broth is cooked with lemongrass and wormwood vermicelli. When cooking for a certain period of time, coconut water will be added to make the broth sweeter, clearer and more delicious.

The ingredients served with vermicelli are boiled snakehead fish, separated from meat and bones; Boiled ground cloves, peeled and roasted pork cut into pieces. Noodle soup in Tra Vinh province also has a combination of spring rolls and pig’s blood dipped in salt and chili.

Besides, noodle soup is also served with many types of vegetables such as bean sprouts, chives, grated water spinach, grated banana ears, herbs, laksa leaves… or some banh gio, fried porridge. When enjoying, add a little lemon, chili, and fish sauce for more flavor.
