Can be caught all year round, but snails are not many, so nail spring rolls are not popular, only when there are guests at home, during the Tet holiday, people in Giao Thuy will process them.

The meat of this snail is chewy and sweet, so it is loved by many people. To choose delicious snails, pay attention to their color, choose those that are yellow, not broken or chipped. Fresh nail snails will still have a characteristic fishy smell of mud. You need to pay attention to the cleaning process to avoid the condition of the snails being gritty and losing their appetite. To let the snails release the soil and sand in their mouth and can be easily cleaned, put them in the water to wash the rice, add a little crushed chili and soak for about 30 minutes to 1 hour.

The recipe for this spring rolls of the Giao Thuy people is not too complicated. The important thing is that hearing is made from eight rice roasted and then ground. In addition, it is necessary to pay attention to the two stages of making spring rolls and making dipping sauce. When making spring rolls, first wash the nail snails and remove the intestines from the body. Put the nail snails in the pot to boil for about 15 minutes, then remove the shells, wash and drain. The boiled water is decanted to get clear water and then boil it again for the snails to blanch.

The next step is to squeeze the spices, add the main noodles, fish sauce, and garlic to the mixture, mix well by hand to infuse the snails, then add the thinly sliced ​​cooked pork ears. After the snails and ears have absorbed the seasoning, sprinkle with hearing. When you sprinkle hearing, squeeze the ingredients until you see that the hearing is not wet, the nails and ears are broken, then stop. Finally, add the sliced ​​lemongrass and mix to complete the Giao Thuy standard spring rolls.

Making dipping sauce to serve with spring rolls requires minced garlic, main noodles, fish sauce, add a little filtered water and chopped chili. The type of fish sauce that is often used to accompany dishes in Giao Thuy is Sa Chau fish sauce, which is elaborately made from fresh, raw, unchilled scad, scad, and shrimp. The profession of making the fish sauce in Sa Chau, Giao Thuy has existed for hundreds of years. The better the fish sauce, the more it determines the taste of spring rolls.
