The donut shop Ms. Yen (Hoan Kiem, Hanoi) is always busy with buyers every day. At the peak, there are days when the bakery makes 10,000 thousand pieces a day to serve customers.

Sharing with PV, Ms. Yen (65 years old) owner of a donut shop on Luong Ngoc Quyen Street (Hoan Kiem, Hanoi) said that she has been making cakes for more than 3 decades. The bakery has existed in the heart of Hanoi for so many years and has never changed its location.

“I made donuts before opening this bakery, but left it unfinished for ten years. After deciding to redo it for sale, the shop has been open since 1990, and is always full of customers,” said Ms Yen.

In particular, the bakery is made by the brothers in the house, Ms. Yen does not hire outsiders. The work is divided according to the line, the members who are familiar with the work should bring high efficiency.

Most of the baking stages are processed in front of the customers’ eyes, many curious guests are watching the process of making traditional donuts.

Here, guests come to buy a wide selection of cakes: sugar cakes, honey cakes, pastries and savory cakes. The cake is molded round, just to eat, with attractive eye-catching colors. It is known that the shop opening hours from 4:30 am to 19 pm, her ingredients are carefully prepared and sold out during the day.

To make a “unique” cake flavor, Ms. Yen must take care of each stage. Sticky rice must be yellow flower sticky rice to achieve flexibility and aroma. The rice is then soaked and grinded with a handcrafted stone mill. Fill the cake with beans, cooked, then use a smooth beat machine, mixed with wood ear, fried noodles. 

The most surprising thing is the selling price at the bakery, each one is only from 2,000 – 3,000 VND depending on the type. Ms. Yen said that the reason for such a selling price is because the shop does not lose the rent for the premises, all stages and materials are made by family members, reducing costs.

The customers of the bakery are mostly patrons. There are also many people who come to eat for the first time, but they all know the bakery because of its affordable price and guaranteed quality.

“Many people come to eat, find it delicious, so they order them for resale, one day customers get thousands of them. Not only in Hanoi, many customers in Phu Tho, Nam Dinh also come to buy,” Ms. Yen said warmly.

As one of the “real customers” of the donut shop, Ms. Hoang Thi Thao (62 years old, Old Quarter, Hanoi), though far away, comes to buy every day: “The cakes here are delicious and easy to eat, everyone likes. If I do not eat again, I miss it, the price is reasonable but the quality is also guaranteed. I buy it as a gift from time to time.

Every day grind up to 100 kg of rice

After more than 30 years of maintenance, the bakery has never been a customer, mainly state agencies. To ensure the number of cakes to meet the needs of customers, on average, Ms. Yen’s bakery 1 day grinding to 100 kg of rice. On peak day, selling about 10 thousand cakes, revenue about 20 million. 

In the morning, the shop opened early to prepare, but still could not make cakes for sale. Customers queue up from 5:00 am, wait until 15-20 minutes to get cake. “Customers complain of misery because of eating, because they have to queue to buy, other types of cakes can not be eaten, some customers say ‘the bakery Ms. Yen has no rival'”, the owner of the bakery smiled brightly.

From morning to night, the members always hand-molded and fried cakes. At 12 noon, the bakery is still sizzling the sound of fried oil, brothers and sisters take turns eating lunches and bakeries. Finished making the cake must be put on the frying pan through one turn to prevent stickiness, the second time need to stir the cake evenly, crunchy and well-done. Each batch of 200 cakes takes 12 minutes to fry, ensuring the maturity and deliciousness of the cake.

“The process of battering sugar to make honey cakes must be quick, turning the sugar until just enough to cling to the outer layer of the cake. Just leave it too hot to make the cake easily bitter and smells bad”, Ms. Yen added.

Through many ups and downs, the customers of the donut shop 2,000 VND still come back and support every day. Not only at affordable prices, delicious cakes, but also by the love of the profession comes from the word “heart” of the seller.

“If customers request anything, we will do so, buy one or a hundred of them in turn. Buying more or more I still sell that price, the customer is the motivation for me to maintain this traditional dish”, Ms. Yen share.  Follow Dân trí
