Milk tea at Ms. Phuong Thanh’s shop, District 11, is cooked in a clay pot, with many herbs added, making customers willing to wait half an hour to drink.

The terracotta milk tea shop on 3/2 Street owned by Ms. Bui Thi Phuong Thanh, 35 years old, has only been open for nearly a week but is always crowded with customers. Many customers, instead of waiting, went to the counter to watch and videotape the milk tea-making process.

Ms. Thanh said that terracotta milk tea originated from the Yunnan region and is quite popular in Taiwan and mainland China. During a trip to Taiwan, she witnessed how to make this drink so she learned how to prepare it herself. The family is also of Chinese origin so the owner can easily find the source of ingredients.

“This dish is popular on social networks and is of interest to young people, so my shop is always crowded. It’s not even 9 p.m. but it’s sold out, 200 cups a day,” Ms. Thanh said.

The special thing is that milk tea is cooked on a terracotta stove. The owner imported 40 clay pots from China and equipped with three gas stoves. On the counter are all kinds of ingredients. “You can cook with a gas, electric or charcoal stove, but you must use a clay pot so that when roasting the tea and ingredients, it will have a distinct aroma and keep it warm longer,” Ms. Thanh said.

A complete portion of milk tea includes more than 14 ingredients with about 500 ml of milk tea. The pot has a built-in filter so the poured tea is not mixed with flower petals or herbs. Guests can drink directly from the clay pot or pour into plastic cups to take home.

The ingredients for making milk tea are mainly herbs such as goji berries, red apples, chrysanthemums, persimmons, jasmine, oranges, mulberries, cinnamon flowers, butterfly beans, longan, and cordyceps, arranged beautifully.

After heating the clay pot, tea and sugar will be roasted for about 20 seconds to enhance the flavor. Next, the other ingredients are added and stirred well before adding water and fresh milk. This special preparation makes the tea have a rich scent.

“A portion of milk tea takes an average of 15 minutes to prepare, so you have to wait a bit,” said Ms. Thanh. Tea is suitable for drinking when it’s dark or cold, so the shop “the later it gets, the more crowded it is”.

A portion of milk tea costs 35,000 VND, with varieties such as rose black tea, cinnamon flower black tea, jasmine green tea, herbal roasted rice tea, and butterfly pea flower tea. Customers pour into plastic cups to serve while still warm or can add ice depending on taste.

Waiting more than half an hour to enjoy the “trend” milk tea, Nguyen Tuan Manh, 20 years old in Tan Phu district, said he was impressed with the way to cook milk tea directly with a clay pot and many accompanying ingredients, so he accepted. long time for waiting.

“When drinking, it has the typical aroma of tea, the taste is not too sweet and fatty. The herbs in the pot are also edible so it is quite strange,” Manh said.

The shop is open from 3pm to 10pm every day, the space can accommodate about 50 people sitting on the sidewalk, ground floor and upstairs, tables and chairs are placed quite close together. Most of the customers are young people, usually crowded at 8pm every day and have to wait nearly half an hour to drink milk tea.
