Ms. Trinh Thi My Phuoc (46 years old, from Tan Binh town, Hiep Duc district, Quang Nam) shared that it was not a coincidence that she decided to engage in the profession of making peanut candy; Because it is not simply a dish, but also contains childhood memories and pride of the country.

In the beginning, Ms. Phuoc experienced many failures, sometimes the cake was hard and the quality was not up to par. Not giving up in the face of difficulties, Ms. Phuoc tried to find an accurate and unique formula.

In 2019, she plans to start a candy making business on a more systematic scale. Before implementing facility development, she found out the reasons why previous professionals failed when bringing products to market. Notably, they have not researched and invested thoroughly, are not able to consume products stably, and especially have not paid attention to food safety and hygiene issues.

After that, she boldly borrowed capital to invest in buying machinery such as candy cookers, vacuum machines, baking machines, and designing, buying packaging, and labels.

The investment in machinery and equipment has contributed to creating conditions for Ms. Phuoc’s facility to improve product quality, reduce labor and production costs; At the same time, increase competitiveness and lower product prices so that good quality products can reach consumers.

According to Ms. Phuoc, the first step that is also worth noting in the production process is choosing peanuts. She purchases ingredients from local farmers, paying higher prices than the market to choose first-class beans that are not damaged or flat, and are not bitter when eaten…

In particular, Quang Nam peanuts are small but round and firm, with a very distinct aroma and flavor, making peanut candy more attractive. Next, bake rice paper to make a base for pouring candy, prepare granulated sugar, lemon, ginger, and sesame.

Sharing about the most important step, Ms. Phuoc said, sugar water is the “soul” of peanut candy, so the sugar coating step is very important. The sugar must be just right to create a flexible adhesion.

“A successful batch of bean candy will be attractive from the color to the unique flavor. Even if left for a long time, the crispiness of the rice paper and beans will still be retained. When biting into the candy, the sweet taste will spread in the mouth, blending with the fatty taste. and the aroma of roasted peanuts and sesame,” Ms. Phuoc said.

Currently, Phuoc Hiep Duc peanut candy products are well received by consumers. Not only in Quang Nam province, products are also present in the markets of Quang Ngai, Da Nang city, as far as Ho Chi Minh City… and on e-commerce sites.

On average, each month, Ms. Phuoc sells more than 21,000 bean candies, priced at 12,000 VND/small piece, 25,000 VND/large piece.
